Corn!

As part of our Canning series we recently took some time to freeze corn! I froze whole kernel corn and also made creamed corn to freeze. It's pretty simple, although it is a little time consuming depending on how much corn you get. We got 4 dozen ears of corn and used this great kernel cutter from Pampered Chef to take the corn off the cob!


We used one of our favorite sites with detailed directions Pick Your Own including pictures with every step! We blanched the corn for 6 minutes (on the cob), cut the whole kernel corn off the cob, put it in ziplock bags and put it in the freezer! One thing worth noting: it was recommended ot us that you freeze the corn within 48 hours of the corn being picked for the best taste and freshness. Here's what we ended up with:



In total, we ended up with 4 bags each of whole kernel corn and 2 bags each of creamed corn!
